The fifth collection to join the Teatime Around the World series is Japanese Tea Ceremony (Cha-no-yu). Nerikiri is a category of traditional Japanese confectionery made by heating a mix of Shiro-an (white bean paste) and Gyuhi (soft mochi) to create a sweet, thick paste which is crafted into beautiful forms.
Sweet delicacies are an important part of Japanese tea ceremony, with the role of playing up the deliciousness of tea, and are selected to suit the season, theme and style of the tea ceremony.
Nerikiri are artistic, fresh confectionery categorized as Omogashi, the highest form of hospitality at tea ceremonies, and perfect for pairing with Koicha.
